      Ingredients
      • 1 Egg Yolk
      • 3 Clove garlic
      • 4 Fillets Anchovy
      • 1 Tbsp Dijon Mustard
      • 1 Tbsp Worchestershire Sauce
      • 1/2 Lemon Fresh Lemon Juice
      • 1 Cup Infused Olive Oil
      • To Taste White or Champagne Vinegar
      • To Taste Salt and Pepper
      Instructions
      1. In Blender combine egg, garlic, anchovy, and dijon mustard. Puree until garlic and anchovies are smooth.
      2. While blending on medium speed, slowly begin pouring in olive oil, making sure to not overwhelm the egg mixture with oil.
      3. Once all oil has been mixed in, add Worcestershire sauce, lemon juice, and then season with salt, pepper, and vinegar to taste.
      4. Pour into a dressing vessel and refrigerate immediately.
      Recipe Notes

      If dressing begins to separate or look cloudy, the egg mixture and oil have not completely emulsified. Add a few drops of hot water while blending rapidly to fix.

      If dressing fails, keep your mixture. Restart by whisking or blending a new egg yolk till it becomes significantly lighter than it was originally. From here cautiously add portions of the failed dressing, emulsifying it with the new egg.
